- Prepare the butternut squash by peeling it, removing the seeds and cubing it into 1-inch pieces.
- Turn on the Instant Pot and select the “Saute” function. Once it is hot, add the olive oil and wait for it to heat up.
- Add the chopped onion and minced garlic to the pot and saute for 2-3 minutes or until the onions become translucent.
- Add the cubed butternut squash and stir for a minute to combine with the onions and garlic.
- Pour in the vegetable broth and stir to combine all the ingredients.
- Close the lid of the Instant Pot and ensure that the valve is set to “Sealing”.
- Select the “Manual” function and set the timer for 10 minutes on high pressure.
- Once the timer goes off, allow the pressure to release naturally for 5 minutes before switching the valve to “Venting” to release any remaining pressure.
- Carefully open the lid and use an immersion blender to blend the soup until it is smooth and creamy.
- Add heavy cream or coconut milk (if using) to the soup and stir until it is heated through.
- Add salt and pepper to taste.
